Broccoli and Bacon Salad
Serves 2.
Ingredients:
- Head of Broccoli, with the stalks removed and cut into pieces
- ¼ red onion sliced finely
- ½ cup bacon diced and pan fried to crispy
- ¼ cup grated parmesan cheese
- ¼ cup mayonnaise
- 1 tablespoons of white vinegar
- ½ teaspoon brown sugar
Cooking instructions:
- Boil some water in a large saucepan. Whilst it is boiling, add the broccoli for 2 minutes. Drain immediately and run under cold water to stop the cooking process.
- Transfer to a bowl and cool completely. Add the red onion, bacon, cheese and gently toss to combine.
- Mix the mayonnaise, vinegar and sugar and mix it through the salad. This is great on it’s own or served with meat or chicken!
