Chicken Coconut and Green Bean Stir Fry
Ingredients:
- 1 tbsp vegetable oil
- 2 tbsp red curry paste
- 2 chicken breast fillets, thinly sliced
- 100g green beans, trimmed
- ½ chilli thinly sliced
- 1/3 cup coconut milk
- ¼ basil leaves
- ¼ cup chopped green onions
- Lime wedges to serve
Cooking Instructions:
- Heat a wok or large frying pan over high heat. Add the oil and curry paste and cook for 1 minute. Add the chicken and cook for 2-3 minutes or until cooked through.
- Add the beans, chilli and coconut milk and cook for 1-2 minutes or until the beans are tender. Stir through the basil and green onions.
- Serve with the lime wedges and rice.
