Chicken, Vegetable and Hokkien Noodle Stir Fry

Ingredients:
- 1 tbsp oil
- ¼ onion sliced
- ¼ capsicum sliced
- 1 garlic clove - peeled and crushed
- 150g of sliced chicken breast
- A handful of green beans - trimmed and sliced
- ¼ cup of water
- 2 tablespoons of soy
- 1 tablespoon of chicken stock powder
- 1 teaspoon of honey
- 100g Hokkien noodles – heated for 60 seconds in microwave or immersed in boiled water.
Cooking instructions:
- In a heavy based saucepan, heat oil over medium heat, add onion, capsicum and garlic – cook 2 minutes.
- Add chicken and cook for 4 minutes. Add green beans, water, stock and stir over heat for 2 minutes, add honey.
- Add noodles, salt and pepper and serve.
For a vegetarian option use a quarter of cubed sweet potato instead of chicken.
